For the daytime sunrise/sunset shots, I'd go with Fuji Provia 100F. Nice saturation, decent contrast, very easy to scan. You could use Velvia too. The slides will look very nice, but they'll be a bitch to scan. Not sure what to recommend for the nighttime shots.
