Some of the EXIF metadata fields, and maybe the IPTC ones, too, allow 
software like Bridge and Photoshop to embed in the photo the fact that 
they were used in the processing of the image.  It's possible that ACR 
is updating these metadata values, even if it doesn't modify the image 
data.  You could try using something like exifer a TIFF tag dumper to 
write the metadata before and after to two different text files and 
compare them to see if there are changes there.
