Dave, I chimp a lot too. Most often I am checking the composition or obvious tech flaws such as closed eyes, or terribly tilted horizon, etc.
Sometimes I notice that my histogram is off. Then I usually dial 0.3 (extremely rarely 0.7) Ev of compensation (usually -, but somestimes +) and go on shooting happily. In general I trust my camera with all things exposure. It hadn't let me down yet. Focus and/or my own faults are another thing all together.
