I have used powdered potato to stand in for everything from ice cream (with a lovely 10W-40 sauce to add to the delicacy of the menu) to whipped cream, to keep the glycerine shiny pies looking like they just came out of momma's kitchen. They also didn't mention the food photographer's very best friend, the Hudson's Bay store, which stocks some of the nicest cutlery, plates and table dressings, which, for some reason, they will sell to you on a Monday, and happily refund your purchase on Thursday, but are less happy about it if you purchase on Friday, and return on Monday.....
