I use two softbox diffused flourescent sources. One light is perpendicular to the table one is at a 45 degree angle or thereabouts.
The camera doesn't allow for manual f-stop adjustment. However you can increase DOF by pushing the ISO up manually to stop down the lens but I never bother with that since I want the least noise. One thing I do is to meter in the highlights to stop the lens down a stop. Wide open the lens is something like f3.5 which offers some depth right off.
