Jeff Schewe put a tutorial video on a rather sophisticated b&w
conversion technique using PS layers and layer masks up on his blog. The
basic idea is to extract the R, G, B and Lightness channels from a
colour image as individual layers in a greyscale image, then use brushes
on the masking layers to select the "best bits" from each layer. As a
bonus he demonstrates a very attractive sepia technique using the Color
Balance filter that takes advantage of the shadows/highlights controls.
The demo uses CS4 but it worked fine in CS3 for me (modulo slightly
different menus), and I think that the technique could work just as well
in Elements too, though the keyboard shortcuts might differ.
I found it a rather good tutorial, and I generally avoid video tut's
because I usually find them too ponderous and low on the useful-info per
minute scale. But I learned a whole bunch of useful tips about PS in
general as well as this excellent b&w technique during this 8 minute
vid. Well worth the time taken.

I suggest doing a "Save as ..." to grab a copy of it so you can review
it later in case it disappears off the web.
