GC has embedded within it a JPEG 6.0 implementation. It allows you to use its embedded implementation or the one that Apple supplies using the QuickTime JPEG codec. Which one is better or how do they differ? No idea really. You have more explicit controls available when you use their implementation as they can control the JPEG compression parameters of their own implementation.

And why in the world would there be an option to /not/ embed the sRGB profile?

There are people in the world who strip all profiles and metadata ... to what purpose I couldn't say.

Again, the only thing I need this program for is to write captions
into the image file for sending out to agencies and papers etc.
Graphic Converter is the least expensive program I've found yet that's
capable of doing this.

Whatever floats your boat...

I owned and used GraphicConverter for a while, but mostly for its ability to convert oddball image formats into standard image formats. I find it a very awkward tool to use for anything else.
