I don't use AF-C much, but i will. For me, i found it easier to just
do a rapid fire half press on the shutter button, in AF-S,  then fire
when i have the shot i want.
I do that more with my K10D than my D2h for example but even then i
used this method for dressage a lot, were there is constant movement.
