When you shoot RAW, no processing has occurred in the camera. However, the jpeg viewed on the LCD screen has been processed. You can adjust how much or how little by tweaking yur jpeg settings.

But isn't the histogram on the LCD based on a jpeg from the RAW  capture?
This tweaking could be misleading when on a RAW capture.

Yes, but dialing down contrast and saturation on your jpeg settings makes the jpeg histogram approximate the RAW. It's definitely close enough to keep one in the ballpark.

Dialing up contrast & saturation on the jpeg settings could lead to false histograms as far as the RAW capture is concerned, even tho the jpeg (on the LCD) might look ok.
