Well,  yeah, it's hard to get them unaware. Almost impossible.

1. This is not  the wild. 2. They know people are around, and expect people 
to be around. 3.  While they aren't really afraid (when I raise the camera, 
they know I am not  going to hurt them), they are still wild and somewhat 
suspicious. 4. And when a  doe has her kids with her I've noticed that she is 
always wary, even in  areas that are relatively safe (there are some 
bobcats around at  night).
