They're all licensed here, with little plates affixed to their wagons. The same vendors occupy the same spots every day. A few years ago there was a bit of a scandal when some popular (indoor) restaurants were found to be quite wanting in matters hygienic, so the city instituted an inspection blitz, which included these outdoor vendors. All must display their "passed" certificate to show they've passed muster. Of course, those inspections don't guarantee the nutritional value of the comestibles involved! ;-) > And, er, nice shot!
