Chippy's is a fish & chip place a few doors down from my place. Ironically, the owner is vegetarian. Perhaps that's the reason the fries are done in a separate deep fryer from the fish.
No, it's done because if you cook fish in a potato fryer you get really foul tasting potatos after a while.
