My take was a bit different. Many decades ago when I was in college I earned my 
meals by working at a sorority house populated exclusively by "princesses" from 
NYC. I was constantly dealing with requests from the young ladies: "my steak is 
too well done, bring me one that is slightly more pink"; "my lobster is too 
cold, bring me another one"; "you didn't put out ketchup for the steak, go get 
it for me"; etc. It was tolerable because the housemother had one inviolate 
rule: "don't annoy or complain about the cook or the kitchen/waiter staff; it 
would be hell to find another good crew." So I would politely tell the young 
"ladies" that I would try and do better the next meal, but what they had was 
what they were going to get. And if they wanted to desecrate their fine steak, 
they could go and find the ketchup in the pantry on their own. When I read your 
Craig's List piece, I felt a bit of sympathy for someone who needed to ask for 
help, a bit of admiration at the chutzpah  of the lady for the picky details, 
and a bit of deja vu as I thought about those young princesses from long ago.
