I shoot RAW almost exclusively, and I rarely consider white balance, other than to make sure there's a gray surface in frame. Using the RAW converter eyedropper to set white balance on a neutral gray object is the foolproof way to shoot digital.
When I did have to shoot jpegs for a VR panorama service, I set white balance prior to each shot with a gray card.
