there is a tool called Exposé which gives at a glance view of windows in one app or in all apps, there is another tool called Spaces which allows assigning different apps or different windows in the same app to different virtual screens
(i don't use the Mac OS X Dock myself - i use a keyboard-based launcher & an alternate switcher)
