Probably iMovie for the Mac. I don't know if it comes with the the Mac OS or not. Wikipedia says it's part of the iLife suite that comes bundled with new Macs. Looks like it's only $79 (for iLife) if you have to buy it.

On the Windoze side there's Windows Movie Maker up through Vista. Windows 7 has Windows Live Movie Maker which is supposed to be an updated, streamlined version, but leaves out some features found in earlier versions.

But previous versions of Windows Movie Maker can be installed on Windows 7.

I won't get into Linux/Unix video editors, because you can do the same Google search I did.

I've only really used Windows Movie Maker and have been introduced to iMovie because I have to make a QuickTime movie for my Small Format class this semester. I don't know if iMovie will actually output QuickTime. I think I have to use another program to convert the iMovie output into Quicktime.
