Of interest is that the way Youtube compresses video here - you're
presenting the system with a difficult video!! Moving water like that is
testing the encoder to the max and it can't keep up with the changes in
the water as it moves. How old is your Mac. It's quite possible the
video processor can't cope with displaying all that water in full
resolution on your display.

here's a test - simply make the window displaying the video of your
original a lot smaller - say a quarter the size of your screen - now
does it still jump? If it doesn't, you are hereby enabled to go buy a
new Mac ;-)
