Right on!  Welcome to the dark world.  ;)

If you are noticing more grain than was evident in prints made by 
another lab, it could be a number of things:

1) the film could be overprocessed.  Compare the new negs to some that 
appear to be finer-grained, and see if your new negs are thicker.  If 
they are, reduce your agitation or shorten your processing time or lower 
your temperature.

2) your enlarger head and lens combo may be giving you a much sharper 
picture than you were getting from that lab, the downside being that the 
grain becomes emphasized.

3) I had a third possibility in my head, but I've forgotten it.  Someone 
else can probably come up with one.  :)
