pretty much what i do — a 2009 MacBook Pro 13" in my case, and Aperture instead of Photoshop; since i'm usually doing a lot more than just photography with the computer, it suits me well; a MacBook Air would save a few pounds; on trips where wireless is readily available, i think i'll also move to cloud-based backups instead of carrying a portable drive
on an extended trip without a laptop i would want to find an SD card duplicator and enough cards that i wouldn't have to reuse any; this would be very lightweight and fairly secure (could even send copies of cards by post)
