Cheese salad. Doesn't sound like much, does it? I wasn't expecting much, but when I took the first bite it was sensational. Flavour, texture of the baguette, fresh ingredients, amazing dressing. Everything was as good as it could be. When I went back for another a few days later I said to the lady that I'd been in a few days before. "Oh, yes", she said. "You had a cheese salad sandwich and a beer". So in a tourist town, very near the centre she remembered what someone she'd only seen once ordered. I asked her what the secret of the sandwich was, and she said it was the quality and freshness of the ingredients. When I said there must be more to it, she admitted that the mayonnaise was home-made, and I'd say that was what really took it beyond greatness! Anyway, she and her husband were very pleased that I'd enjoyed it so much, and for me it was one of those happy little experiences that make France so great.
