Sounds lovely, Rick. I'm guessing that your primary fermenter is a 5 gallon carboy (not a 6) by the lack of headspace. You might want to build a Burton Union, if you haven't already, to help reclaim some of that blown off yeast: http://byo.com/stories/item/351-build-a-burton-union-system-projects
