Larry, Mt. Shasta has a bunch of beautiful places/vicinities. We spent some 4 days almost exactly a year ago there. One of the places I liked was the lavender farm in the vicinity: http://www.mtshastalavenderfarms.com/
Close to Redding, CA, you can go to the Shasta Dam. Nice views are from the middle of it (you'd have to walk on it from the parking lot near the dam visitor center, but it would be hot, most likely!) I really enjoyed Lassen Volcanic National Park, but it is about an hour away from I-5. Sorry, I don't have any photos handy from that trip.
