If you don't mind spending a bit of money, the Fuji mirrorless cameras are a very nice, basic on the outside, very advanced on the inside cameras. They have dials rather than buttons for camera settings, and their imaging quality is superb. One of the things people on the Fuju forums are always amazed by is how good their out of camera jpegs are, which is nice for someone who doesn't want to have the whole digital imaging spectrum thrown at them at once. The Fujis are very amenable to using manual focus lenses, though their X series lenses are every bit as good as Pentax lenses. Something like the X-E1 might make a very nice starter camera, and Fuji has an excellent upgrade path.
