You can set black white and mid-gray points very easily in photoshop, the problem being that you very seldom have a mid-gray in your picture. It has an "Auto Levels" function, which seems to work ok, though I for some reason don't use it. Doing the levels manually is not difficult either, you can place the mouse pointer over a point on the screen and get red, green and blue level information for the original and new settings.
