There is no perfect bag, which is the problem. Sometimes you luck out however.
i am a bag whore and have thrifted 95% of my bags, so i totally dig your choice; i am sitting on 30 or 40 bags right now, including some major waterproof Lowe Pro bags i never use, but my perfect bag has turned out to be whatever size basic messenger bag works; usually it is the tiny Fat Eddy's Townie Tote, a lightly padded bag i wear cross-chest, from a defunct firm in Steamboat Springs; it's big enough for a K-5 and extra prime, but usually has just camera with lens mounted, and often lately i only carry OM-D E-M5 with a 20mm lens; i usually put a thin sheet of cushy foam in with the camera, as a wrap to keep dust off
in essence, anything padded and right-sized works, depending on my kit, though on a serious hike i use a MountainSmith lumbar pack and for serious miles in cities i use small, innocuous backpacks
beer and camera bags are quite similar; Charlie Papazian taught me that the best beer in the world is the one you're drinking
