Eric, taking an offline copy on a shoot is one of the very first scenarios that LR was designed to cover. There's a good description of the process in the book that these people sell: http://www.d-65.com/workshops.html
You may even find it on the site. I had an earlier edition of the book and it's very good, although I've never needed to use it in that way, but I think it would be a bit of a struggle for someone to write it all out as a response to any email...
