I still haven't sold my mac mini, I absolutely suck at sales.
It's a quad core, with maxed out memory (16GB), and I shoe horned a 2TB SSD and a 2TB spinny into it. Unfortunately, while it will support multiple displays, only one of them can be 2560x1600.
After this version, mac minis were downgraded to only being dual core. So, this is pretty much as powerful as you can make a mac mini for photo processing.
