A good rolling cutter can be much more precise than a guillotine cutter, a bad one is less precise.  I've used both on actual photo sensitive paper and on inkjet paper.  I consider the multiple edges to be gimmicks.  I'm sure they're good for something but don't see any actual use for them in photography.  Also the removable blade versions for use with the different wheel types seem to be less precise than those that are only expected to be replaced when the blade gets dull.
