A couple more thoughts on the subject:
First, there are apps that are positioned as a "scanner" (or scanner
replacement). I've tried one of those ("CamScan", or something like that,
maybe CamScanner). I suspect their settings expect most of the background
being white, so they are tuned for that. That can be more suitable for the
task.
Also, there are relatively simple apps that allow changing brightness and
constrast, cropping, etc. The one that I've been using on my phone (mostly
for cropping and resizing) is called QuickPic. But as fas as I've heard
it's been purchased some 2 years ago by a company with a shady reputation.
So, I am not sure I can recommend it.
At least, I am not updating mine.
