Dave, Time Machine should have the most recent installed version in the latest backup. That said, I have not had much success reinstalling Adobe applications via Time Machine. Their installation is complex and involves some authentication files and links that they create in various locations on the system book volume. For this reason, you should always keep a copy of the original Adobe installer along with your authentication key in the event that you need to do a re-install of LR or PS, or any other Adobe software.
For this reason, as a practical matter it's not important what Time Machine is storing when it comes to Adobe applications.
