I contended with this issue as well:

The result - the bulk of my stuff I shoot B&W is HP 5+ thanks to Frank
mentioning the deal @ Downtown Camera (3 rolls for $10) and I use Perceptol
1:1 almost exclusively with this film and I get results that look like
Delta 100.  It's THAT good.

I do have some D-76 old school developer still in a 2.5 L jug but I have
yet to use it for any major work - I did use it on some test rolls of X-Pan
but it was so mondo contrasty that I haven't used it since - probably just
the combination of film/dev that caused that.

I have Xtol but have yet to mix it up to use for anything - I've heard good
things about Xtol - apparently it warms up the B&W images nicely - it seems
like most people on the list seem to abide by it - it never hurts to try
out new things so I'm willing to give it a go once I deplete the stock of
D-76 I have.  

The hard part for me is finding SPACE to store this stuff if I mix it AND
being able to shoot enough film to warrant me using it without it going bad
on me (i.e. within 6 months).

Unfortunately the money we payed for the class buys the chemicals 
for all and the instructor likes and uses Tmax 1:4.
Looks like i'l need to supply my own person with more than 1 
developer in the house for use on different films.
Is this what most of you do or do you stick with a favorite.?
