I use dreamhost to handle all of mfdz.com's incoming mail. it just hits the dreamhost servers and is forwarded to my gmail account, but it rarely hiccups. as far as the hosting stuff goes, Dreamhost was built for static stuff, it seems. my only troubles with it have been using up too many cpu minutes, and getting shutdown for it.
that said, if you have access to the mx records, you might try setting her up with gmail for her domain. probably more reliable than dreamhost, even, and more fun.
