They don't represent an external reality because reality is much more complex 
than any of those factors. Instead they are a projection from many dimensional 
reality to a few dimensions. Just like your height tells us a little about you 
but doesn't enable us to replicate you. 

The book is clearly taking a postmodern approach which I find confusing.
