As i can see from Authen::SASL:Perl::DIGEST_MD5
code the servicename is part of authentication, too:
'digest-uri' => $self->service . '/' . $self->host,
Can you please check if the change of servicename ('pop3' vs 'pop') causes the
problem? (I can not test DIGEST-MD5 here).
