I went ahead and installed PDL::Graphics::Gnuplot from
https://github.com/drzowie/PDL-Graphics-Gnuplot/zipball/master, and
after some tries, I managed to get the hidden surfaces. Under pdl2, I
typed
pdl> use PDL::Graphics::Gnuplot 'plot3d'
pdl> $r=zeroes(20,20)->rvals;
pdl> plot3d({extracmds=>'set hidden'}, sin($r)/$r);
and it worked. (It took me some time to realize that plot options had
to be passed as a hash ref).
Nevertheless, I found a funny behavior. Now I am unable to rotate the
image interactively, as I could with the CPAN version of the
package. Moreover, if I try to rotate the image and call plot3d again,
I get errors
pdl> plot3d({extracmds=>'set hidden'}, sin($r)/$r);
WARNING: the gnuplot backend issued an error:
gnuplot> ????????I????~??.o???}???????M?????9?????~o
?????????M???Dm?8????????J?????!????????&d??u?\'??z??q???????h?:
^
line 0: invalid character ?
and the plot has noise with values of the order of 1e276. After I
initialize $r again, the plot3d starts working again. Somehow, trying
to rotate the image interactively destroys the data pdl.

Luis
