Dave, Not quite Ubuntu, but I have personally experienced openSUSE on the eeePC. This was part of the recent HackWeek 2 (where SUSE/Novell hackaers get to do whatever they want), and created eeeSUSE. The wiki is crystal clear on how to get it working - http://en.opensuse.org/OpenSUSE_on_the_EeePC. I believe there is an Ubuntu derivative called eeeBuntu but not sure (I haven't even searched).
