Sometimes I can't find what I need with Google. Sometimes (like for 
this) I find so much information I just end up confused...

I have a Postfix server (which I set up using a collection of how-to's 
so can't really claim to know how it works!) which collects mail, runs 
it through dspam (to remove spam) and amavis (to remove viruses) before 
dropping mail into a local POP3 mailbox or forwarding it to an external 
email address (eg hotmail or similar).

What I want to add is to allow it to collect mail for certain domains 
for forwarding to another SMTP server (the server to use depends on the 
email domain and is not held in MX records). (Typically it will deliver 
mail directly into an Exchange server at a customer site without that 
customer's ADSL static IP being published in MX records.)

I've found secondary MX information (where Postfix would look up the 
destination based on DNS) but haven't found a good enough query to find 
information about setting a destination SMTP server per email domain.

Also: I have to handle the destination server being offline for periods 
of a few days. I would assume it will retry automatically for a short 
period before returning mail undelivered; I need to make sure that 
period is going to be long enough (ie configurable).
