My instinct is to look at Debian, although in some ways it's similarity to Ubuntu makes it harder work than (say) Fedora would be.
Either way, my experience of installing Linux is pretty much based around the "download CD & boot from it" approach which doesn't apply here, and I haven't yet managed to grasp the concepts which do apply. It's times like this that I start to realise that I never really understood what initrd/vmlinuz/grup/etc "do"....
