Dear Stefan, thanks for the reply and for the links. You're right, the shift is not essential for producing a waterfall plot. I did eventually use
\addplot ... y expr=\thisrowno{1} + <some y-shift value>... for the desired outcome, so the issue is probably a case of mixing incompatible features. My best, - J. P.S.
