See the contrib/pgcrypto module. It has functions like digest() for making SHA1, MD5, and other digests; hmac() for making Hashed Message Authentication Codes; and encrypt()/encrypt_iv() and decrypt()/decrypt_iv() for doing encryption and decryption.
