I haven't personally tested PicoGUI on the 68EZ328 in a while. I'd like to spend more time testing and tuning picogui for various hardware, but I've been too busy trying to add features :)
I really doubt that the IPC is the problem. Unix sockets should be plenty fast. Most of the time is probably spent in the video drivers. What resolution and color depth are you in? You might try running pgserver under a profiler to identify what's using the most CPU time, then tweaking that code.
