Open the Preference Browser (World Menu > System... > Preferences... > Preference Browser...) and change the uiTheme in the windows category (or search for "ui") and pick another theme.
Unfortunately the noviceMode preference seems to have disappeared from Pharo (in Squeak, with that on, you'd get balloon help for the buttons).
