Try this in Squeak:
HostWindowProxy basicNew primitiveWindowTitle: 1 string: 'My Title'
squeakToUtf8
In Etoys we have a convenience method for this:
DisplayScreen hostWindowTitle: 'My Title'
(because Etoys shows the current project name as window title)
