Absolutely, PHP is used on production servers in many 64 bit Operating Systems. I use it myself on our production SPARC solaris servers.
Also, you may note that PHP has been ported to Novell Netware in the past: http://developer.novell.com/ndk/leadedge.htm#le169 However, it seems to be a beta version only so more work is most certainly expected.
