Sorry to answer myself, but here goes another question:
php_admin_value disable_functions phpinfo()
or
php_admin_value disable_functions phpinfo
change the value displayed by phpinfo() but... if I can see the result of
phpinfo() it means it's not disabled... What goes on here?
