Try using more variables to make life a little easier to parse:
        
        $colname = $_FORM['form']
        $query = "select {$colname} from structure";

        while (($row = mysql_fetch_array($result)) !== false)
        {
            echo $row[$colname];
        }

Use better variable names.  And avoid register_globals.
