Turns out that there was more than one php.ini on the production server and the php.ini it was using was in /usr/local/lib, and register_globals was turned on. Turn register_globals off, and my problem went away. But as it turns out, we have to leave it on for the time being because of legacy code that hasn't been rewritten yet. Found that I had a form field and a php variable with the same name. I changed the form field name and I'm back in business. Many helpful clues.
