I would add one thing and change another.

<?php
$host = $_SERVER['HTTP_HOST'];
$domain = preg_replace( '/^[^.]+\./' , '', $host) ;
echo $domain;
?>

Adding an additional '^' to the start tells it to start at the beginning.
And changing '*' to a '+'
