Chris,

Debian is a Linux Operating system, it runs on AMD 64.
It is very secure and stable. To get the options you
want, use apt. You would enter commands like this:

apt-get install sendmail
apt-get install apache2
apt-get install mysql
etc...

As far as an email server specifically, I know that
Debian has everything you need either on CD or in the
repositories, and I know you can have multiple
addresses/domains/users and use POP3/IMAP/Webmail,
etc. As far as setting it up, I've never done it so
you'll want to look for a good Linux mailserver
tutorial. A few good ones were posted on Digg not too
long ago, otherwise http://www.google.com/linux.
