Just as a matter of interest, what would happen if the "real name" <email>
format was used. Would it still send the email?

In my testing with Windows Servers, it does not send the email in this case,
and instead creates an error.
However, my testing is having major problems.
I am unable to get the mail() function on a Windows Server to send mail at
all and my Windows web host (on which I created an account just to try to do
this), has been unable to get it to work either.
So, for the time being, I'm adding notation to my script that it doesn't
seem to work on (some) Windows servers.
